Greek anthologies ascribe the origin of truffle to a lightning thrown by Zeus near an oak tree considered sacred for the Gods.
However, in the mystery and magic of the woods of the Langhe, in the shade of oaks, linden trees and poplars used to live in the past and still nowadays lives the prince of tubers, the White Truffle of Alba.
Its irregular shape, ramified whitish venations and an intense scent make it the most precious truffle in the world.
In the Truffle Bistrot this extraordinary product is offered from October to January, by selecting the traditional recipes and creating new dishes from the Mediterranean cuisine which divinely pair with the White Truffle.
During the other months of the year, different other varieties of Truffle match with our dishes: the Summer truffle, the Winter Black truffle and the Bianchetto, all coming from the Langhe, the hills where the flavour of the earth combines with the flavour of marine winds of the Mediterranean sea close by.
